The BEST Pumpkin Bars
I had several people ask me for this pumpkin bar recipe so here ya go:
Ingredients:
1 cup butter
2 cups sugar
1 large can pumpkin puree
6 eggs
2 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. ginger
4 1/2 cups flour
1 tsp. baking soda
1 1/2 tsp. baking powder
1 cup chocolate chips
Bake at 350˚ for 15-20 minutes. This makes two jelly-roll pans full.

Cravings
Today at work I thought all I needed was chocolate. In actuality, I was craving this coffeecake. I made it this evening and it was perfect. So. . . Here is the recipe to the best coffeecake you will ever have. You're welcome :)

- 1/4 cup salad oil (I used canola)
- 1 beaten egg
- 1/2 cup milk
- 1 1/2 cups sifted flour
- 3/4 cups sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup raisins (opt)
- 1 tsp. vanilla (opt)
Topping:
- 1/4 cup brown sugar
- 1 Tbsp. flour
- 1 tsp. cinnamon
- 1 Tbsp. melted butter
- 1/2 cup broken nuts
Combine oil, egg, and milk. Sift dry ingredients; add to milk mixture; mix well. Pour into greased 9x9x2-inch pan. For topping. combine the brown sugar, 1 Tbsp. flour, cinnamon, and melted butter and nuts and sprinkle over batter. Bake at 375˚ for about 25 minutes or until done. Serve warm

Lofthouse Sugar Cookies
AKA The Best Cookies You Will Ever Make
For the cookies:
Ingredients:
- 1 cup butter
- 2 cups sugar
- 3 eggs
- 2 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp baking powder
- 1 1/2 cups sour cream
- 5 1/2 cups flour
Cream sugar and butter. Mix in the eggs, sour cream, and vanilla until smooth. Mix in the dry ingredients. Let refrigerate overnight.
After refrigerated, roll out dough to 1/4-3/8 inch thickness on a heavily floured surface. Put the cookies on an ungreased cookie sheet and cook for eight minutes at 435˚. This makes five dozen cookies if you use the canning ring for a narrow-mouth jar to cut the dough.
For the frosting:
Ingredients:
- 4 cups powdered sugar
- 1/2 cup butter
- 5 Tbs milk
- 1 tsp vanilla
Cream together the butter and sugar. After that's thoroughly mixed, gradually add the milk and vanilla. Add food coloring as desired.
Frost the cookies and enjoy!
